You can not use composite and you will have terrible performance.
There is nothing you can do about that, xinerama sucks.
Im running a xinerama-desktop across 3 monitors and when i set a wallpaper i get that wallpaper on each screen individually.
Can anyone tell my how i can stretch the wallpaper across all 3 screens?...

I booted the old kernel (2.6.35) and now everything runs fine.
Its a athlon x2 5200 on a board with a nvidia chipset.

Also, if your edited xorg.conf does not work, you will find the reason in /var/log/Xorg.0.log
"cat /var/log/Xorg.0.log" will display the whole file.

I never managed to completely set it up with nvidia-settings. You can arrange the monitors and select xinerama and whatnot but i never got it working right.
Here is my complete xorg.conf with 3 monitors next to each other:
