Use Gnome Tweak Tool to set "Use Dark Theme".
However it appears that GTk2 applications are not affected by this. If there is a way to get GTk2 applications to use Adwaita Dark I'd love to know...

Sadly what you want is gnome2-globalmenu but it only works with Gnome2 and only GTK applications. It's the most accurate in mimicking the Mac Global Menu.

Not sure but when I used 12.04 + Docky I had a lot of random crashes and was never able to resolve it.
Could try Cairo Dock or AWN but I too enjoy Docky a bit more since it's simple.
The Gnome Shell Remix distro is actually not bad at all and it's been fairly stable for me. Probably your best bet for Gnome + Ubuntu w/o Unity.
