Hey all, hope everyone is doing well this morning, had a question, I just got a spare monitor and have it plugged into my laptop, my question (which probably has a simple answer) is how do I "extend" my desktop to the monitor - much like you can do in Windows?

I'm afraid that you're about to find out how much UNlike Windows Ubuntu is in this case. I am almost certainly going to be unable to provide you with solutions, since I have never really got my dual monitor setup with a laptop to work just the way I want. However, I might be able to give you just a few pointers on how to get more effective responses.
Please post information concerning:
video card / display subsystem (make and model)
type of external monitor (CRT / LCD)
input type of external monitor (VGA / DVI)
if external monitor is LCD, what native resolution
native resolution of laptop LCD
which version of Ubuntu (8.04, 8.10, etc.)
This information may give the experts here a walking, if not running, start in helping you.
From here on in my role will more probably be in watching and hoping to see something useful than in actually providing anything useful.

I know what to do with nvidia cards lol but not ATI xD. It's generally wise to have the proprietary driver installed too.
If not it's time to edit xorg.conf
