I've noticed that the post count is way off. It seems that the post count on my profile is incremented by one, for every 10 or so posts that I make. I'm curious, is this the norm?

Posts only count toward your post count when made in the tech support areas of the forums.

Guys I am wondering how come Forum Feedback & Help (http://ubuntuforums.org/forumdisplay.php?f=48) does not count to wards this post count? (I understand the RC/loco teams) but the main forum?

Feed back should not count. but helping should.
Just my opinion.

It is generally staff that give the answers in FF&H, and a few, but welcome, others.

We aren't talking about a huge loss of counted posts.
