I have three of the Inspiron 1525 systems. (Two different hardware configurations, but that is it's own story.) Should I be using the 32 bit Ubuntu, or the 64 bit version?

How much RAM do they have? If more than roughly 3.5 GB (now or in the foreseeable future, ie if you are planning to upgrade it evenually) then definitely go for 64 bit.

Right now they only have 2 gb of RAM.
So, I'll just leave them running the 32 bit.

Yes, with 2GB of RAM you will hardly notice any benefits of 64 bit (although there some but they will probably be outweighed by the disadvantages). If you think that you might add RAM at some point, then you might as well install 64 bit now, since you can't upgrade from 32 bit to 64 bit, you have to do a clean installation.
