I installed RockBox, and I already had some songs on my iPod from GTKPod
it fond these, and i could play them just fine

RockBox is drag-and-drop, right?
so i went to the Music folder where these tunes had been, and deleted all the folders. NOW when i start up the iPod, it says that all the songs are there, i can choose any one i want, but they won;t play, because they are not actually there

PLEASE help, it's frustrating me

Rockbox can be a little slow on updating its' database. Navigate to the settings menu -> General Settings -> Database -> Update Now. Wait a few mins, say 5-8 depending on how your storage capacity. The database will be updated, it's just not always prompt.
Note : I'm running Rockbox on a Sansa player, but it should have the menus.

Thanks man
Will it tell me when it's done?
'cause i did as you said, and it said "updating in background"
will it inform when it's done?
or do i just have to keep checking...

It won't inform you when it's done. And if you still have an issue or two with tracks showing up when they shouldn't or not showing up when they should just be patient, it's just an idiosyncrasy of Rockbox. To me, it's well worth it.
