I'm thinking about trying new distro's of linux (since I'm getting a brand spanking new computer soon) and well I'm looking for a mac os x like linux distro. I want it to have a dock, global option banner (at top), mac os x gui. I don't care about if it has leopard features. I just want a mac os x like linux experience with very similar gui and feel.

Mac OSX
or Maybe Dream Linux? There's tons of OSX clone themes out there anyway.

KDE can be easily customized to include an 'all-in-one' bar on the top.

Although you solved your issue, you might want to review this (http://maketecheasier.com/turn-your-ubuntu-hardy-to-mac-osx-leopard/2008/07/23/) page. Basically, you start with a standard i386 (not x86_64!) install of Ubuntu, and modify it to act like Leopard. I tried it and from what I could see, it's pretty slick. I didn't get to try out the global menu bar, since it's only compiled for i386 and I'm using x86_64, but the rest worked like the real thing.
