I use k9copy at the moment, because it:

allows ripping to an ISO
can shrink the copy by compressing
allows selection of title tracks to rip
gets around recent pesky copy protection mechanisms

Last I ued dvdrip, it could not get around more recent copy protection mechanisms and could not rip to ISO, only VIDEO_TS folder and seemed generally less user friendly.

Are there other rippers that comtain the above features that I could maybe try out?

It all depends on what your goal is.
If you are trying to rip a DVD into an ISO, then the three I recommend are K9Copy, DVD95 and xdvdshrink (not in repository).
If you are trying to create a video file (.avi, .mpg, .ogg etc.. out of a DVD then there are plenty of programs to accomplish this.

my goal, as I hinted at in my post, is to rip a DVD to an ISO. No conversion whatsoever. Just want to do a straight rip that removes region coding completely, gives me the option of removing all menus and extras if I so wish (I prefer this method), and enables me to shrink a dual layer movie onto single layer, which probably means I need some encoder to convert from mpeg to mpeg.

Are there any rippers that easily allow you to choose the audio tracks and subs to include when ripping even if you want to get rid of all extras and menus? I want to be able to keep swedish/english audio tracks when available and swedish subs, but even in K9Copy, this is not an easy feat to determine which subs are which.

k9copy is in fact the best app for ripping, fast and easy to use, superior to any other ripping application, but to me it's a kde app and I don't like my gnome polluted with kde apps, so I have settled on dvd95 converter as my dvd ripper, it's also fast on ripping, the only drawback is it will only encode the video to theora format.

and yes it rips to iso, and you can choose the subtitle track.
