Right click on an .mp3> Properties> Opens With tab.
Most people will have different personal preferences on players.

Personally I use Amarok, it does all I need it to do (and a little more). It's a KDE based application if you like to know that kind of thing

Right click a mp3 file, "Open with other application.." choose application or type it's name, and it will be used from now on.
My personal preference is Amarok. It may require kde libraries and may not fit with ubuntu theme, but I just can't without it :)

You can right click on an mp3>Properties, go to the "Open with" tab and you can choose from the list or add another program to open your mp3s.
I really like Amarok...
sudo apt-get install amarok
