Anyone use this app for reading PDF files? If not, what is the accepted/recommended app for this type of job?

That, would be Evince for me.

Evince is a good choice but you can use some more
like pdfcube which shows even 3D in PDf.
sudo apt-get install pdfcube
Further you can also use ghostscript viewer
sudo apt-get install ghostsciprt

Foxit is good, but I believe it is a windows only app. I find evince very similar; quick and stable.

Evince comes with Ubuntu on the CD. Lots of things do!

That's the great thing about Ubuntu! It already has everything you need for most day to day stuff.
