I'm using Ubuntu 7.10 and the only thing that is wrong with it is the speakers still play audio whenever headphones are plugged in (a problem which still exists in 8.04). I've just tried PC-BSD on my laptop and found that the issue is resolved (speakers are muted when headphones are plugged in).

My question is, can I use FreeBSD / PC-BSD drivers on my Ubuntu install? And if so, what package exactly am I looking to compile and install? Or is it compiled in the Kernel when it's installed?

No, you cannot. There is no *BSD compatibility layer for linux.
