I'm in a position in the near future to be purchasing a box to perform high-speed imaging processing for an academic research project. Due to the nature of this project we will eventually be trying to miniaturize everything, so a tiny PC like the Koala Mini would be ideal except that it has no expansion slots. Is there any chance that a version of the "mini" will be released that has a single expansion slot?

Note: Video/TV-in is actually insufficient for our application (we are doing biological imaging, so the lossy compression these cards use is unacceptable), so adding that would not help.

That is not likely in the near future.

Most of the educational researchers we sell to seem to prefer the Wild Dog.
It's a powerful and fast workstation that has been used for everything from aircraft design to genome research.

It is smaller than it used to be, but still may not meet your miniaturization requirements.
