I currently have 7.10 and downloading the torrent for 8.04 now. I was curious how easy is it to update? Do I have to burn it to a disc? I don't have any discs right now so can I just mount it?

You should burn it to a disk, although if you run the "Update Manager" it should prompt you if you wish to update via the web. (This will take a few hours to d/l the Updates and install).
Best to backup your "home" folders before you upgrade.
The CD will be quicker.
People say a wipe and clean install is best others say the upgrade works fine.
As long as you have a backup, pick which ever you are comfortable with and take the plunge :D

can we partition the HD for the home dir with 7.10 and install 8 safely without losing home?

Upgrading should be fine.
Just run the update manager from System>admin when it runs click the check button put in your password and it will tell you there's is a new release.

First back up your files and use APTonCD (http://aptoncd.sourceforge.net/) (you have it in synaptic,so no need to download it from link) to back up your var/cache/apt/archives if something goes wrong.When you do that you can try this. (http://ubuntuforums.org/showthread.php?t=743943&highlight=iso)

Upgrading using the update manger is very slow now since everyone is trying to download from the same server. Use torrents. It is very quick. I have listed the steps I followed here: http://ptcbus.blogspot.com/2008/04/upgrading-from-ubuntu-710-gutsy-gibbon.html
