I'd like to add more top-level entries to my GNOME menu to move several subfolders from my Applications menu directly onto the panel. For instance--- "Applications, Places, System, Games, Multimedia" etc.. Alacarte obviously doesn't do this. Is it possible? I'd be okay with adding additionally menu-like applets (not drawers) that can get the same effect.

Can anyone point me in the right direction? E.g., where's this data stored, can it be changed, where could I get other applets if the default menu won't do this, etc.?

As far as I know this is not possible and I've never seen anyone do it before, pretty sure it's hard coded.

Try this:

1. Right-click in an empty area of your panel.
2. Select "Add to Panel"
3. Select "Application Launcher" in the upper-left hand area of the window.
4. Select the Application sub-folder of your choosing, such as Accessories, Games, Office or whatever.
5. Click "Add"
6. Click "Close"

That should do it. Now you have a new button you can click on that will bring up the sub-folder.

Huh, didn't realize it was that easy. Thanks. Was kind of looking for text, but I think I prefer it this way.
