It should be really really easy to convert from Windows.
My idea is as follows:
-Windows users can download an .exe program, which install Ubuntu on a Windows partition (create a lot of 4BG files for Ubuntu). Then the boot.ini is changed. This means that no partition or bootloader is ever changed! Also it is not nessacerry to burn a CD. Also the user can just go to 'Add remove programs' in Windows and delete Ubuntu if it doesn't do its job.
All of this is possible with technology from knoppix.

-A link to the users (readonly) documents in Windows should be possible. Also a guide should be made, on how to use documents in both Ubuntu and Windows. (A plugin in Windows to read linux filesystems?)
-Also easy import of mails, adress list from Windows. Thunderbird can do it, so it should be possible to borrow source and get evolution to do it.
-Users that exist on the Windows partition should be created in Ubuntu.
