Another great site is http://www.pixel2life.com. It also has Inkscape tutorials. If you haven't checked out inkscape yet be sure to do so because it's great for vector art.

There is also a downloadable tutorial called "Grokking the GIMP"

In Synaptic Package manger search for grokking-the-gimp

If you're happy with the command line:

sudo apt-get install grokking-the-gimp
