I've noticed that users have a "Thank You" rating below their forum details. Where can I read how this system works please.

There's a little star medal below every post, clicking it gives the poster one Thank.

Thanks for the explanation, very helpful. Can I ask if this system is intended to replace the "thank you" written message, or should we still be using both written and the thank-you tab?

It is perfectly fine to respond with a verbal (written) thank you, to let the user know every worked. The use of the Thanks feature allows you to thank someone without bumping threads, or cluttering it. It also allows a user to have a more tangible message that others can see.
