I do not have a GUI installed on my Ubuntu Server but would like to remote into it from my desktop PC (Windows or Ubuntu, I'm flexable) What would be the best way to do this?

Here is a howto to get you started:

All my servers run w/o a GUI, and I use SSH to administer them. I'm sure 99.8% of admins use ssh to administer their linux server.

If your running a Windows PC to access via SSH, I suggest using PuTTY. It's free and works well.
