I don't know what Reason is but you should try Jokosher and Audacity, grab some samples from the web (freesound project etc) and then you should be ready.

I'd definately love a Cubase SX 3 replacement.

pianos - zynaddsubfx for playing live
synths - see above
drum machine - hydrogen
for all of above with midi, try LMMS or Rosegarden
Don't hold your breath for a Cubase replacement, or Reason, or any of these things. Its not the nature of the game, nor should it be.
Would we all be happier if there was a Cubase clone that had minor inconsistencies and was looked upon as a cheap ripoff?
No, I think the power of linux audio comes from modularity, from using applications that do what they do really well. Like hydrogen with drums, and ardour with audio editing.
Personally I like the interface of TuxGuitar, so I write my composition there, and import the midi file into LMMS or Rosegarden, and drum tracks from Hydrogen..
Usually I just deal with audio though, maybe someone more midi oriented has better ideas for you!

sudo apt-get install lmms
After that, in terminal, type lmms.
That'll launch it.
I've used LMMS many times before, and unfortunately, after using Cubase for a long period (over a year now), I just can't use LMMS.
I miss the options Cubase provides.
Cubase was the one thing holding me from moving back to Linux, after I used it.
So recently I said "ah well what the hell" and moved back.
I don't for a second regret this.
I just miss Cubase at times :(

Reaper is a really great Windows audio/midi sequencer. Very reasonably priced and an amazing development cycle - constant updates to a very stable code base. I find it much better than Cubase, which I used for years, though the midi side is still catching up with Cubase.
The reason I mention it is that some people have it running well under WINE in linux. I might try setting it up myself when I have more time... I'm just running a WUBI installation of Hardy Heron at the moment.
