How do you use Wine?
You personalize it adding some .dll changing things in the registry..
I'd like to know how much wine is usable out of the box.

I use PlayOnLinux (http://www.playonlinux.com/en/) and customise each game.. and I get a lot of info from here (http://appdb.winehq.org/appbrowse.php?iCatId=2) : )
I find that Wine changes each release... games that used to work suddenly don't and games that didn't suddenly do.. PlayOnLinux completely solves that problem.. and if this was one of those sort of american dream type 1950 adverts.. I'd be that chap in a picture smoking a pipe saying how amazing wine is.
..and it is.

I personally make one Wine directory per app installed (except when I want to install libraries as in .NET)
I almost only install games. Some of them tend to require some tweaks that would break other games that are working.
Therefore, having one Wine environment for each app allows me to apply whatever hack is required. More, I can get rid of an app by simply deleting the wine directory, without harming the other apps.
