Now that I have gotten Ubuntu installed, what packages do you guys recommend that I install?

That's an open question with no real answer. I wouldn't recommend anything, for it depends on what you want to do ...

It would be easier if you could tell us what you want to do and we can recommend a good app for that.
Personally I always install mplayer, mplayer mozilla plugin, k3b, VLC, Kaffeine and the dvd decrytion libraires and codes and I add the microsoft fonts for better web page viewing.
I add the flash plugin and the w32 codecs and thunderbird. In thunderbird I like to install lightning extension and provider for google calender.
I am sure there is more but that should keep you busy
