So I have a working 360 controller (perfect in zsnes and mupen64). My question is how does it work with ePSXe? I've used the the padjoy plugin in but but the analog sticks don't exactly work. Is there another plugin I can download and place somewhere that better supports the 360 controller? Thanks for any help.

The PadJoy plugin is the only one I ever managed to get an analog controller working in in ePSXe, kbless7.
However, like most Playstation emulator users, I'm aware that ePSXe is a good 4 1/2 years out of date, and I've been using a much better Playstation emulator, pSX Emulator (http://psxemulator.gazaxian.com/), for the last year or so in Linux (since the first Linux version was released), and in Windows for another year before that.
It's pluginless, so no messing around with plugins needed. It does seem much easier than ePSXe for getting controllers working, although 360 controllers are often difficult anyway. My guess is that, if your 360 controller is working Ok in ZSNES and Mupen64, it should work Ok in pSX.
