Would ubuntu CE be suitable for Orthodox christians?

It should.

The major issue is that none of the Bible Study Software includes all of the material that is found in the Orthodox Canon.

The minor issue is that the tools that precalculate the date of Easter, do so according to the rules of Catholic Christianity, not Orthodox Christianity.

I'm not aware of software that is written specifically for Orthodox Christians.

The major issue is that none of the Bible Study Software includes all of the material that is found in the Orthodox Canon.

e-Sword 8.x includes support for the following Canonical Books:
* 66 Book Protestant Canon;
* Catholic Deuterocanon:
*** Daniel 13: (The Story of Susanna)
*** Daniel 14: (Bel and the Dragon)
** Tobit
** Judith
** 1 Macabees
** 2 Macabees
** Wisdom
** Sirach
** Baruch
*** Baruch 6: (Epistle of Jeremiah)
*Anglican Deuterocanon:
*** Daniel 13: (The Story of Susanna)
*** Daniel 14: (Bel and the Dragon)
** Tobit
** Judith
** 1 Macabees
** 2 Macabees
** Wisdom
** Sirach
** Baruch
*** Baruch 6: (Epistle of Jeremiah)
** 1 Esdras
** 2 Esdras
** Prayer of Manasses
* Orthodox Anagignoskomena:
*** Daniel 13: (The Story of Susanna)
*** Daniel 14: (Bel and the Dragon)
** Tobit
** Judith
** 1 Macabees
** 2 Macabees
** Wisdom
** Sirach
** Baruch
*** Baruch 6: (Epistle of Jeremiah)
** 1 Esdras
** 2 Esdras
** Prayer of Manasses
* Psalms 151
* 3 Macabees
* 4 Macabees

The following books are not changing, in this incarnation:
* Greek Esther;
* Song of the Three Young Men;

This means that the major deficiency of e-Sword, for Orthodox Christianity, is the lack of commentaries, lectionaries, dictionaries, and topical files for/from a perspective of Orthodox Christianity. :(
