There's a design I want to work on for the next week or so and it'll involve about 7 or 8 layers. Now, when I save it, it prompts me to export it. Okay fine. I hit export. But then when I reopen it, all of the layers are flattened into 1. I need the separate layers. I want to be able to open the image in the future and have all of the separate layers there. How can I do this?

I'm guessing you're saving as jpeg and not .xcf

Yes. This will be based on the file type. jpg & png do not support layers properly (at all).

Yes. Its best to use .xcf as your default format for your "master" and merge the layers when you are ready. You can save the "Final" in any suitable format but keep your "master" with all the layers.
For a "big" project, consider creating a separate directory for component images and "tests".
