Gridwars. Not available in the repos due to an intellectual property dispute, but you can get it here (http://www.getdeb.net/app.php?name=GridWars+2).
Within the repos, I'd suggest Battle for Wesnoth, OpenArena and Planet Penguin Racer.

I have heard Cultivation (http://cultivation.sourceforge.net/) is awesome but have yet to try

Cultivation is a game about a community of gardeners growing food for themselves in a shared space.
Cultivation is quite different from most other games. It is a social simulation, and the primary form of conflict is over land and plant resources---there is no shooting, but there are plenty of angry looks. It is also an evolution simulation. Within the world of Cultivation, you can explore a virtually infinite spectrum of different plant and gardener varieties.
All of the graphics, sounds, melodies,and other content in Cultivation are 100% procedurally generated at playtime. In other words, there are no hand-painted texture maps---instead, each object has a uniquely "grown" appearance. Every time you play, Cultivation generates fresh visuals, music, and behaviors. Repos
Nexuiz (http://alientrap.org/nexuiz/index.php?module=downloads) but I'm pretty sure the one in the repos is the latest.
Tremulous (http://trem.tjw.org/backport/linux/tremulous.x86)- Rename to tremulous and Install from the repos then go to /usr/lib/tremulous and replace tremulous with the tremulous you downloaded there.
Then
sudo chmod 777 /usr/lib/tremulous
And make sure Compiz, Beryl, or Compiz-Fusion is not running in the background for both games.

I have tried Cultivation. It is beautiful and unique, but so annoying and hard. The AI is so rude, it just goes to your land and steals your crop, then they polute the land... But, that is why it is a challenge: it would be too easy without the shared land conflict.

Since it is not in the Ubuntu repositories, one must install it manually. I always refer to this guide:
