I'm in the process of upgrading some servers for a Catholic Elementary school. They currently user a Freeproxy/Cybersitter combination to get to the internet. It works PERFECTLY, except for being a tad slow.
SO, being an Ubuntu fan, I want to try using Linux for the proxy server. (It has 2 gigs of RAM, and a decent CPU).
I just have no idea how one would do that with Ubuntu.
Any ideas?

Dan's Guardian is a good proxy server.

I agree, Dansguardian, for an immediate solution.
There are some "out of the box" solutions out there, as well, that include different options for proxy modifications. I hate to mention it again, but I run Smoothwall (smoothwall.org), which has a large user base and a core group of developers building add-ons. If you go with SWE 2.0, there is an add-on call "URL Filter" (you can find it in the forums) that allow you to block different site categories, subscribe to blacklists, etc... It is pretty flexible and extremely powerful.

Ubuntu CE can be used as a proxy server and filters out exactly what you want.
Here is the subforum for Ubuntu CE: http://ubuntuforums.org/forumdisplay.php?f=168
