I was wondering if there are any other OS choices for the Treo other than windows mobile or palmOS. Would it be possible to say install a tablet version of Linux on it?

yes, i believe this one is nice. there is a how-to, snapshots and downloads at this site - http://opie.handhelds.org/cgi-bin/moin.cgi/Hardware
