I've got SMB installed and configured well on my ubuntu machine but seeing as i'm accessing shares from an OSX iBook most of the time, would NFS be more appropriate? Is it any faster or more efficient?

Apple is using Samba for their filesharing in OS X (used quite a bit on OS X Servers). So, I would stick there - make things easy on yourself. NFS has it's own special headaches.
