Changing Menu Font Color?

how do I change the color of the font for the menu bar (apps, places, system)

I'd like to a dark color, but when I black out the menu..I can't see the text..

If you are using Ubuntu (Gnome), go to:
System > Preferences > Themes
Click on the "Customize" button; you should see a "Colors" tab.

Not all themes allow you to change the colors of text and background; you have to trial and error.
