Is there a way to setup an account for a one-time-visitor?
For places like clubs, there is no point to assign a specific account for a one-timer. Instead, it would be better to allow "one-time-account".
Seting a std guest account will not be a good idea since every change a specific user will do will affect all others that will use same account later on.

I think you do need a guest account, but I think what you do is you make the guest accounts home directory writable only by root, that way they cant make any changes
