Generally the best place to look for documentation about forums, is in the forums' own web site. For example, phpbb:

http://www.phpbb.com/support/

Phpbb is a good starter choice as it's very easy to install, has lucid multimedia installation guides, and also runs on php & mysql. Many people claim that it has serious security problems, but I think a lot of this is due to phpbb users not patching quickly enough. This was certainly the case of the infamous 2004 santy worm attack.

phpbb works very well and many web providers have cpanel with fantisco that will install it automatically. I believe the phpbb site has a how to or maybe It was in the install file or readme file within the archive.

There are many mods

Instead of the default registration screen I disabled the photo and addedn test questions; like "Are you a robet?" and it stopped the spamming which is the bigest problem with security I found this mod is know as Textual Confirmation.

The other 2 mods are Able2know which makes the phpbb more user friendly to google (static pages for guests) and the attachment mod to allow files to be uploaded. I've had 0 spam since installing these mods.

The phpbb site has good info there.
