When you say edit text in a picture, do you mean add words or take words out and put in your own?

To add words, click on the T button. Click where you want the text and it will create a new text layer. Maybe I'm misunderstanding the question

Well, you can undo, or if you really just want to start over.

Go to new and choose either background color or foreground color under the advanced options.

Everything you need for colour should be under tools -> colour tools
