Try "flightgear" instead.
sudo apt-get install flightgear

Cool, I didn't knew such simulators did exists.
Did not test them yet, but are there as good as it seems? Can they compete with flight simulator from MS?

Making MSFS 2004 run on ubuntu will be very difficult considering that it was made by Microsoft for their operating system. Apparently Cedega (http://www.transgaming.org/) has had some luck with getting it running, but its rating is 1/5, which I guess means that it's barely playable.
As for the X-Plane demo not working, you'll need to be a bit more specific. Does it not start, does it crash?
All and all, I think you'll have much better luck trying FlightGear (http://www.flightgear.org/) (you should be able to find it through synaptic).
