wasn't sure where to post this but does anyone know of any multi-track recording applications?

not sure but audacity might.

failing that check out the Ubuntu Studio project.......theres a sub forum for it here somewhere

I have not used it (yet) but Rosegarden (http://www.rosegardenmusic.com/) looks like a good one.
