Which is better, inserting it as html into the body of the email, or attaching a pdf file?

by the way; it would be useful to keep some different cv's for different applications. i meant; every kind of application is focusing soe different bases. keep that in mind :)

Plain text in the email body, a lot of recruiters are reluctant to download any attachments.

I'd just ask someone which they prefer. If you point out that you have various means they'll think "Hey, that person is prepared and versatile!"

I use PDF unless they ask for "Microsoft Word" format, in which case I always ask if I can send plain text/rich text/pdf. My business demo disc contains my resume/cv only in pdf format. I had one company ask me for an MS Publisher version instead of PDF once, I never sent them my resume but they still call me once a month.
