As a slowly learning Linux admin, I'm trying to install Feisty Fawn 7.04 server version, but I'd like to be able to administer the OS via Gnome and some of the GUI tools available within Gnome. For instance I know that there are GUI tools for administering Apache, FTP, MySQL, etc.
Any recommendations for how to do this?

I'd skip the GUI and install something like Webmin. It'll do everything you want without the added overhead of gnome. I'm sure with a little googling you can find a nice guide on installing that to your server.

I second the Webmin (http://www.webmin.com/) suggestion. It will allow you to administer your whole system from a Web Browser.
