After one year trying all Ubuntu desktops (Xubuntu, my main system now) I discovered how convenient it is to us VMware to test different systems without adding new partitions.
As I feel the need to go deeper in the Ubuntu knowledgement, I would install Ubuntu Server in VMware, and from there try to learn how to manage a Server.
I have absolutely no idea about servers right now (just what I learned breaking and ammending my Ubuntu's Desktops, till now)
Does it make any sense?
Will I give up after some minutes of testing?
Many thanks!

Nope - that's a very good approach. Learning with VMWare keeps you from breaking your "way-to-important" usable system. Keep going to path your going.
