Aside from games (CS:S, AoE II/III and the EA Sports series top the list):

1) Trillian (chat client like gaim... but better)

2) Alcohol 120%... not quite the burning software that K3B is, but great for creating disk images and mounting ISO files so windows thought the real CD was loaded.

3) MathCAD... wow, what a program.

4) AutoDesk Inventor... I don't own it, but we have it at school and its awesome. I haven't used SolidWorks but I hear great things about it as well.

5) Notepad ++ and SciTE because everyone needs a good editor for programming.

Nero 5.0 gets honorable mention. Don't like any version since then, though.

I have been trying to use Ubuntu as much as possible. In fact I use it almost exclusively on my laptop, but the reasons I have to keep windows (in no particular order)
1) Photoshop. Nothing touches this, not Gimp nor anything else I have found. Lightzone is very interesting, but it works much better in windows than linux (even though the linux version is free). And it is still an addition to, not a replacement for Photoshop.
2) Illustrator. Inkscape looks very promising, but I have a lot of files in .ai format that cannot be opened in any other program.
3) ACDSee. or any photo management program. KPhotoAlbum was close, but still not quite there. Likewise, Photo Organizer web based management is close, but not quite what I am looking for.
3a) a file viewer that supports RAW, mind you windows is not great here either, but Faststone (http://www.faststone.org) is pretty good.
4) Printers. Good photo printer drivers are just not avialable for linux. for documents, Linux is great.
5) Networking. OK, it is not a program per se, but I just can't get the hang of networking in linux. it always seems kludgy. yes I have created a mount point in fstab for my server, but many native linux programs don't seem to like working over a network. PS my server is running SME linux.
6) colour management. With hardware measurement. I realize this is largely a driver issue, but I cannot use my spider in Linux.

I do however like the pace at which Linux runs. I am teaching my kids to use Ubuntu, because I believe when they grow up, they will have to know Linux. I am not sure of the future of Microsoft.
I think what Linux needs (for me personally anyway) is more artists who know programing. If I had to set up a new system, and I had unlimited funds, I would have to go Mac, with MS as second choice. As it is I have too much invested in XP to switch for marginal gain.
