I was wondering if there is anything out there that allows me to install a poker game on my server and let me play it on web clients, or even software clients?
I guess this would be a lot like playing on the online sites, but I wanted to see if I could set it up myself locally.
Any ideas?

You can play ddpoker over a LAN.
http://www.ddpoker.com/
I have never used it on Linux, their FAQ says.
Q3. What platforms does the game run on?
A3. Windows 98/2000/Me/XP, Mac OS X (10.3 and higher) and Linux.
Also if you just want to play poker vs. the computer http://sourceforge.net/projects/pokerth/ runs fine on Ubuntu

"poker2d" is availiable in the repos:
poker2D
GTK poker client to play on a poker-network server
Play poker with other players connected on a poker-network server (holdem, omaha, omaha high/low, stud 7 ...) in ring games, sit and go or multitables tournaments. poker2d will automaticaly reconnect to the table if the connection is lost and allows playing on multiple tables simultaneously.

The newest PokerTH version works great on a network. And you don't need to setup a server for that.
