I just installed Steam/Fonts/CSS without a hitch, but now when I start up the game, the Load screen comes up (blurry, with LOADING in the bottom right corner.) After a bit, when it loads, the screen turns completely gray, and even though I can see my cursor... There's nothing. I can move my mouse where the menu options normally are, and it makes the sounds, and if I click on things, I can still hear the clicks, and understand the game is working - just no display.
I can click the quit option and press enter, and it'll exit, so I know the menus are functional.
Fixes?

This is a known bug in 0.9.31 Go back to 0.9.30 or 0.9.29 and you should be able to play CSS just fine. I'm sure the fix will be in the next release.

Just uninstall my current version, and find the previous versions?

basically yes.
Uninstall whicher you have installed, by whichever means you need. I have it running perfectly well using 9.30 currently in the Ubuntu Repos. I also locked the file so that it doesnt try up date to .31 when that goes into the repos.
There is a techie work around for .31 but it written in the finest g33k sp33k so until its written in a human format i cannot make head nor tail of it, Shame really as it fixes alot of directX issues and supposedly speed things up nicely also.

That worked fine, but the game runs horribly.

Which Wine did you downgrade to?
I get flawless performance in 0.9.30 although most people get better from 0.9.29 so i would possibly try that 0.9.29
