I've been using Ubuntu on a Pentium 4 for over a year now, and have just acquired an older iMac (my new toy ;)). One quick question: are there any significant differences between the sources.list for an x86 system vs. a PPC system? In other words, could I copy my x86 sources.list over to the iMac and reasonably expect it to work?

I don't think there are any differences in the Ubuntu repository URIs. They seem to be architecture-independent. I'd check any additional repositories though.

"Additional" being, say, PLF repos? (Obviously WINE isn't going to work on a PPC.)

Precisely. I seem to recall PLF URI's pointing to architecture-specific directories.
