I recently typed up an article in the Community Docs sections on setting up a file server that uses a file system running on LVM on RAID1, though it should apply to other server types. There's alot of screenshots (hosted on my own server, but running through Coral Cache to lighten the load on it), but hopefully they are good to provide step-by-step instructions:

I go through setting up the system, installing software, adding hard drives, and recovering from a failed drive. I originally did this to give myself a reference for my own file server that I built, but I figured that others may find it useful!
