I'm considering buying a KFA2 GeForce GT640 2048MB GDDR3 PCI-Express Graphics Card. Can anyone confirm it'll work under Ubuntu?

Support for the card was added in the latest nvidia driver (295.53). You either need to use the x-swat PPA or use Ubuntu 12.10: https://launchpad.net/~ubuntu-x-swat/+archive/x-updates

Hey Spongebob did you get this card working?

I'm considering buying gigabyte version.

Have you tried setting up more then 2 monitors with it?
I am looking to run my 4 displays off it under ubuntu? edit - ignore this as i just looked and KFA2 version only has 3 display outputs :(
Hoping it works straight out of the box :)

Have you done much with multi monitor setups? If so would you recommend ATI or Nvidia?

if not i'll look into this one
