I have absolutely no experience with updating Ubuntu after
installing it, and know almost nothing about how updating
works. I plan to get a disk with Pangolin on it in a few
days, and install it onto a clean drive.

What can I expect the update manager to want to do? Will
it look for updates as soon as I connect to the Internet?
Will it try to download updates immediately? How big will
these updates likely be, and how often will they appear?
How can I determine which updates I should skip?

how many updates will depend how long it is before you actually do the install , there are update often sometimes everyday I would not hoose to ignore any of them for more then a month remember not onoly updateing ubuntu but all your other software at the same time and lots of it is about bug fixes and security ..

What do you mean by "all your other software"?

Why do you say before you even know what any updates
might be that you would not choose to ignore any of them?
