How to add toolbars, change settings, etc? Right Click seems to not work anywhere?

What desktop environment are you running, as you can't modify the panels in Unity. The one thing you can do is add indicators, just do a search for them in the Software Center or Synaptic. BTW synaptic isn't installed by default.
I've merged three of your threads, as they are all essentially about the same thing.
I'd suggest you have a look at Ubuntu Tweak for Unity, or Myunity to customize your desktop,

So I am stuck with an envelope I don't need and can't change the toolbars?
So how does one easily remove Unity and add Gnome, in a compatible manner - no "hacks" if you will :)

I don't see why you need to remove Unity. Doing that requires uninstalling ubuntu-desktop which is a rather useful metapackage to have installed (to get new default software automatically).
