The one that's the default for 11.10, I think it's Unity. How do I know which GTK it is though?

You should download "Advanced Settings" with the software centre. There you can change your Cursor theme, Icon theme, GTK+ Theme and Window Theme. (i haven't tried the GTK+ theme, still using the default Ambience one). You should also go for the Faenza Icon theme. I will attach a screenshot with some icons

I have the Faenza icons already, just need a better theme. I was thinking about Elementary, but idk.

Yeah, you still need to download the icon set, run:

sudo apt-get install faenza-icon-theme

Then you can use Advanced Settings to choose it as your icon theme.
