Recently, looking through the Software Center, the update note on the OpenJDK states:

Updates: Canonical provides critical updates for OpenJDK Java 6 Runtime until October 2012.Does that mean after the above stated date, Canonical will not provide support for OpenJDK, particular for critical update? Please give full clarification.

I'm not 100% sure but check it it coincides with the date at which the version of Ubuntu you are using ceases to be supported in which case, it just means that for your version, it will be supported until that date.

If that's not the case, then my next guess would be that it would cease being supported since OpenJDK 7 is already marked stable and that OpenJDK 7 is what will be supported after.
