Sometimes I let my brother use my Ubuntu computer in the Guest session and I was wondering if there is a program that would automatically log him off after defined time and is un-quittable? :)

Try that:

After your script is done,
you'll need to call this script at a guest account login:

How do I change the time? Since it's the Guest Session, will it stay in the start up apps and will it affect my own account?

If you find a way to start this script when starting a guest sessions, then i think it will stop taking effect once you log out of the guest session. So if yourself log (as admin) the script won't start.
