I installed Ubuntu on a separate drive on my PC. As expected, it rebooted and I had a choice of Windows or Ubuntu.

Then all the updates got installed, and I didn't know what to do about the problem it seemed to have about installing Grub. I accepted the choice of not doing so, and the updating continued.

The computer then rebooted.

I now have lots of choices of what to boot from - but before I could even note what they were, the screen vanished and the computer booted.

First question - how can I freeze this screen long enough to see what is there?
Second question - why are there additional choices, rather than just Windows or Ubuntu?
