Is there any form of professional training available for folks who want to learn about Ubuntu or Linux in general? Can someone become a UCSE? :)

AFAIK, there WILL be a 3rd test to the LPI certification that acts as an "add -on" for Ubuntu specific certification.

Which i think is a great idea. I'm currently working on my LPI, then i'm working on my RHCT (red hat), and when Ubuntu's drops... i'm on it like s*** on velcro.

I'm doing this more for myself than my career though. I have a hard time teaching myself stuff if i don't have a structure to go by. Otherwise i just learn what i need to do what i want. And i would like to know how to apply my networking management experience in a linux environment.
